Sometimes you just need hamburger buns fast — without sacrificing flavor or texture. These enriched buns are light, fluffy, and slightly sweet, perfect for everything from classic burgers to pulled pork sandwiches. The best part? Equipment Needed

Ingredients For The Dough for 16 buns

  • 760 grams (6 cups) of bread flour (100%)

  • 36 grams (3 tablespoons) of active dry yeast (Fast-Acting RapidRise) (8.6%)

  • 100 grams (½ cup) of sugar (24%)

  • 12 grams (2 teaspoons) of salt (2.9%)

  • 540 grams (2 ¼ cups) of warm water (120°F) (129%)

  • 144 grams (⅔ cup) of vegetable oil (34%)

  • 2 large eggs + 2 yolks (34%)

Ingredients For The Topping

  • 1 egg yolk

  • 15 grams (1 tablespoon) of water

  • 1 tablespoon sesame seeds

Instructions

Mix flour, yeast, sugar, and salt in stand mixer.
Add warm water, then egg + oil mixture.
Mix 1 min low speed, then 8 min medium until smooth.
Divide into 16 pieces, shape into balls.
Rest 10 min covered.
Brush with egg wash, add sesame if using.
Bake at 425°F (220°C) for 8–12 min until golden.
